It's too HOT to do anything

Literally.


It is way too HOT to do anything. I would be perfectly happy laying in my bed all day long. This morning I had planned on running. Ummm nooo. Between, my kid crying most of the early morning and it being 80 degrees at 7 this morning, no thank you. My running plans will have to be taken inside for the rest of the summer it seems. Shrub suggested we start running a 6 am, I politely declined. That is still sleepy time for me.

Speaking of sleepy time. Gianna literally just starting fussing and so I scooped her up and proceeded to go tinfoil her window. Mommy needs some shut eye. I'll let you know if it works as good for me as it does for Raven. I'm keeping my fingers crossed. (another post, another day)

Last night I tried a new recipe and I think it was a success.



Enchilada Casserole
Ingredients
1 pound of chicken
1 packet of taco seasoning
1 can of hot rotel
1 can original rotel
2 cans of black beans
1 can of red enchilada sauce
Sour Cream
Shredded cheese
Corn tortillas

I cooked the chicken, 2 cans of rotel, and taco season for 6 hours on high in the crockpot during the day. During the last 30 minutes I added in the 2 cans of black beans.
I then took the crockpot mixture (by this time the chicken had fallen apart and was nicely shredded) and mixed it in a large bowl with the sour cream and some hot sauce. I literally did the rest of this recipe to taste. I layered a greased pan with the tortillas, then the red enchilada sauce, then my mixture of chicken and beans, cheese, and repeat.

Bake at 350 uncovered for 20 to 30 minutes. Yummy!

I see lots of american friends cooking and posting recipes with ROTEL - i have never heard of this - what is the Canadian version I wonder?
